Blueberry Muffins - 3 Smart Points

These are standard size muffin tins.
These measured 2 1/2" in diameter.  They're a nice size.

You could always lower the total points by using applesauce in place of the butter.  I prefer the butter.  Most things I've baked using the apple sauce don't keep more than a day before getting quite dry.





BLUEBERRY MUFFINS
Makes 12
Total Smart Points 34
3 Smart Points per muffin

1 cup frozen blueberries
2 T. melted butter
1 3/4 cups flour
2 1/2 tsp. baking powder
1/4 tsp. salt
3 T. Truvia (next time I'll use 4 T. so the dough will be sweeter)
1 egg white
1 cup skim milk

Combine dry ingredients.  Whisk together the milk, egg, and melted butter.  Add to dry ingredients and mix well.  Fold in blueberries.

Divide equally into 12 muffin cups that have been sprayed with Pam.  Bake at 400° for 15-20 minutes.
